Firehouse Cornbread

So, I promised you this super easy delicious cornbread recipe yesterday and here it is!

Ingredients
2 cups Bisquick
1/2 cup butter
6 Tbsp. cornmeal
1/2 cup sugar
2 eggs 
1 cup milk



Preheat the oven to 350 degrees.
Put all of the dry ingredients (bisquick, cornmeal, and sugar) in a medium bowl.


Melt the butter and then mix all of the wet ingredients (egg, milk, and butter) in a large measuring cup or small bowl.
Add to the dry ingredients and mix thoroughly.


Pour mix into a 9x9 glass dish or pan.


Bake at 350 degrees for about 30 minutes or until golden brown.



Serve up with dinner!  I made this with my taco stuffed shells.

Delish Dinner: Taco Stuffed Shells

I saw these on Pinterest and had to try them.  I like stuffed shells. I like tacos. Why not some taco stuffed shells?


Ingredients
1lb. Lean meat
1 envelope of taco seasoning
4 oz. cream cheese, cubed
Jumbo pasta shells, cooked
1 cup salsa
1 cup taco sauce
1 cup shredded cheddar cheese
1 cup shredded jack cheese

Preheat oven to 350 degrees.

Brown  meat in a skillet over medium heat. Add taco seasoning and mix well.   Add cubed cream cheese to skillet and cover.  Stir occasionally until cream cheese is melted and blended.  Remove from the heat and cool.  Mix 1/2 cup of cheddar and 1/2 cup of jack cheese to meat.




In a 9 x 13 baking dish spread the salsa to coat the bottom of the dish. 




Stuff shells with meat mixture and lay in baking dish.


Top shells with taco sauce and remaining cheese.

Cover with foil (I usually spray mine with Pam so the cheese doesn't stick) and bake for about 30 minutes or until cheese is melted and bubbly.


Serve with your fave taco toppings- sour cream, guacamole, and tomatoes to name a few.


I served mine with some scrumptious Firehouse cornbread.

I know I shouldn't be happy that he was crying, but that means that he really loves me!  Lol.

3.  I got to go the Bunko this week.  I didn't win any moolah, but I got to hang with some pretty fun ladies.
 Ya need a night out every once in awhile- am I right?

4.  Baby Boy is getting cuter and cuter!  He's grabbing all the time for things now and it's so neat.  They get big so fast!

DIY: Scalloped Felt Wreath

So, after I took all my Christmas decorations down earlier this month my door looked so bare. No more pretty Christmas wreath, so I decided I had to do something about that. I saw this wreath awhile ago on Pinterest here and thought it looked so pretty, yet not too complicated.  
I headed to Micheal's to gather my supplies and got to it.


Here's what you need:
Foam wreath ( I used a 16 inch, but you could always use smaller)
Felt of various colors- 3 pieces of each color so you're sure not to run out
Ribbon
Glue Gun

I chose to use felt colors that were wintery, but pretty.  I used white, off white, dark gray, light gray and a dark purple felt. The ribbon is a grey wired ribbon with some silver sparkle to it.  You could easily make this a Valentine's Day, St. Patricks Day, Easter, or Christmas wreath depending on what colors you choose.

The first thing you will need to do is make a scallop pattern template.  I just freehanded one on the back of an old box and cut it out.  Then I traced it onto the felt pieces and cut them out.  I probably was able to get 4-5 scallop pieces from one felt piece.  


After all of the felt was cut I decided on the color pattern I was going to use.  I then hot glued each piece to the foam wreath.  I used a low temp glue gun for this.  Not sure if a high temp one would melt the foam wreath and I didn't want to find out.  I made sure that where the felt was glued was going to be the back of the wreath.


Here it is after it was all glued.

Then, I cut a piece from my ribbon and made a loop to hang it from and glued that to the wreath.  
After that, I made a big bow and glued that to the front of the loop.


Whatdya think?  Pretty cute and easy to make right?

Baby Lessons #2- Just a few more tips I've learned so far.

This week I'm sharing a few more random tidbits of what I've learned since Baby Boy was born.

1.  Buy baby stuff at garage sales and consignment sales.  I am not a garage saler normally, but a few months after I found out I was pregnant all the neighborhood spring yard sales started happening.  I scoped out when the fancy neighborhoods were having theirs (usually it was posted on Craigslist or on signs in front of the neighborhoods) and got up early on those Saturday mornings to see what treasures I could come home with.  It paid off.  I mostly looked for big ticket items that were in good condition.  I found a nice swing, crib mattress, high chair, baby carrier, Jeep jogging stroller and two gliders.  I also found some nice board books, clothes, and other smaller stuff.  I was picky about what I got.  It had to be in nice condition and working practically perfectly.  Since I really tried to save with a lot of baby things I was able to splurge with others.  So my savings basically went to new furniture and Pottery Barn bedding.  (Darn, PB is so expensive, but cute.)  But, it sure did feel good to get what I want and save money.

2.  Babies don't really do anything the first month or so.  They eat, sleep, poop and hang out.  I was really worried that I was a bad mom because I couldn't "play" with my baby.  Then I talked to a couple of friends because I was worried that all he did was lie around. They basically said "Yeah, he's a newborn.  That's what he does."  Oh, okay.  Super.  So, the first month or so,  Baby Boy had a rotation between hanging out in the Boppy Lounger, swinging in his swing, sitting in the vibrating chair, eating, sleeping, and the occasional tummy time.  Obviously, you can talk, read, sing, etc. to your baby.  Just don't expect a lot from them in response.  Clearly, this changes every week (day really) as your baby learns new stuff.

3.  You will mourn your old life.  It's inevitable and it's normal.  Don't feel guilty.  The first month is the hardest and then it starts getting better and better.  Someone once told me that it gets easier every 3-4 weeks or so because that's about how often babies have new developments.  That makes sense and was about right for me. The first one or two months everyone I saw would say the same thing, "The lack of sleep is the hardest thing, but it gets better."  Honestly, for me that wasn't the hardest thing.  For me it was the sense that my life was never going to be the same.  Ever.  Again.  It took a little while to get over that, but you just do.  You now have a new life and it's most likely gonna be so much better.  My turning point was when Baby Boy started smiling at me.  Once he did that it was like a whole new ball game. The kid is seriously cute!

4.  Some days you'll get a lot done and some days you'll still be in you pajamas at 5:00 p.m.  In fact, you may never take them off that day.  That's just what happens sometimes.

5.  Your house will now be full of baby stuff.  Yep.  It's true.  I'm not a neat freak or anything, but I liked to have to my main home areas (family room, kitchen) looking nice and clutter free the majority of the time.  That is practically impossible now.  Right now in my family room I have 2 different baby swings, an activity gym on the floor, the boppy lounger, a basket of toys, a stack of books, and a car seat carrier.  And it's like that everyday.  Don't worry, you get used to it.

High 5 for Friday 1/18

1.  My Keurig machine is my lifesaver this week.  Baby Boy has decided to start rolling over during his sleep, so he can no longer be swaddled.  Now he sleeps on his tummy, but has been waking up 3-4 times a night.  My sleep all nighter is no longer.  I hope he outgrows this soon.

2.  Baby Boy had his 4 month check-up and is 15 lbs. 11 oz. and 26.25 inches.  53rd percentile for weight, 89th for length, and 89th for head size.  He's had that big 'ol since birth!

3.  My husband is the best ever!  Just because :)

4.  Last weekend it was nice and warm so we got to take some family pictures at the beach and try out the new camera tripod my husband got for Christmas.  See one of our photos here.

5.  I got to spend half a day babysitting my nephew.  Believe it or not it was the first time I've babysat for him by myself when he wasn't sleeping at night.  He's 16 months and super cute too.  He could totally be a baby model.  It was good to know that I could handle 2 baby boys.  I even got them to take naps at the same time.  I think that's an accomplishment.

Infantino Deluxe Twist & Fold Activity Gym and Play Mat Review

I was very lucky to be the recipient of the Infantino Go Gaga Deluxe twist & fold 
activity gym and play mat.  I couldn't wait for my little one to try it.


I broke it open right away because I was so excited.  The first thing that jumps out at you about this product is the beautiful colors and patterns.  The play mat looks like a gorgeous vintage quilt.  All the fabric designs are fun and colorful and the mat itself is plush and soft for baby to lay on.   The arms of the activity gym are covered in corresponding fabrics.


The arms were super easy to attach to the mat with a plastic hook that fed through the mat and clipped on the bottom.  The mat still laid perfectly flat when it was all assembled, which is really nice.  I've had other play mats that would bunch up in certain places because of where the arms hooked to the mat.  That wasn't happening here!  The play mat is also a really nice size.  It gives baby plenty of room to lay or roll without rolling right off the mat.


The activity gym comes with some super cute plush toys and musical mobile.  As you can see in the photo, all of the jungle animal toys are so adorable and colorful.  They definitely catch baby's eye.  They also have crinkly parts and are made of different kinds of material to entice all of baby's senses.  The mobile winds up and play a soothing tune.  It doesn't even get annoying after hearing it about hundred times, so that's a good thing!  I do wish the music would play longer though, as I had to wind it often to keep Baby Boy entertained.  The mobile also has two butterflies that turn for baby to look at while lying on their back.  My son loved the mobile!  He doesn't have a mobile in his crib, so he watched those turning butterflies every time I wound it up.  I guess I need to get him a mobile for his crib!

Along with the mobile and plush toys, it also has a square mirror that 
Velcros to the arms and a little pillow for tummy time.


Baby Boy is 4 months old and loves to lie on his back and is rolling over all the time to his tummy, so I really liked how big this mat was.  He was never really rolling onto the carpet.  Like I said before, he loved the mobile.  His favorite plush toy was definitely the giraffe.  The toys did hang a little high.  He was able to bat at them, but a smaller baby may not be able to reach them at the top loop.  There was a lower loop on each arm that the toy could hang from, however that would put the toys off towards the sides of the mat instead of the middle.  The little pillow was perfect for supporting Baby Boy during tummy time.  He tends to not like tummy time very much since it's pretty tough to hold up that big 'ol head, but he was able to tolerate it for a lot longer using the pillow.  It was the perfect shape to fit right under his arms.



I absolutely LOVED how easy this was to fold up and put away.  All you had to do was twist the top, fold in the play mat, and velcro the straps around it all.  All of the toys and mirror just fold into it all.  So easy!  Look how it all just fits in the nook next to the sofa when we're not using it.  Then, when Baby Boy wants to play on it again I just undo the straps and click the arms into place.  Everything is is already ready to go!  So much better than other activity gyms that stay fully assembled and take up so much space in the middle of your family room ALL of the time.

This week went by so fast!


1.  I'm loving Willie Geist on the TODAY Show.  I always watch the Today Show and have loved Matt Lauer for a long time, but Willie is giving Matt a run for his money.  I'm dorky, I know.


2.  The onesie speaks TRUTH.


3.  My baby boy is officially 4 months old today!  Can't believe how the older you get 
the faster time goes by.


4.  This video was hilarious.  I've been seeing it everywhere- even on the TODAY show!

5.  Jaguars hired a new GM.  Now we can hope for some more wins!

Delish Dinner: "No Peek" Chicken


This is one fast and easy dinner to whip up.  Plus, it's good.  Perfect for those busy days or those days when the baby won’t let you put him down.  Plus it only has 5 ingredients and takes only one dish!  
That’s what I’m talkin about- the less dishes the better!



Ingredients
1 can cream of mushroom soup
1 can cream of celery soup
1 lb. chicken breast
1 box of Uncle Beans Wild Rice
1 ½ cans of water

Preheat oven to 350 degrees.

In a greased 9x13 dish mix mushroom soup, celery soup, water, rice and spices.


Arrange the raw chicken on top of the mixture.


Cover completely with foil.

Stick it in the oven and bake for about 1 hour 45 minutes.
