Low Fat Zucchini Brownies
I crave chocolate- a lot. Probably too much really. Since I have this problem I had to find a way to get the chocolate, but not feel so guilty about indulging. I saw this recipe on Spark and was skeptical. I mean a brownie that has more fruits and veggies then chocolate- how could it be any good? But, they are. Now, do they taste exactly like a gooey chocolate triple chunk Duncan Hines brownie? No, they don't. But, we all know the "healthy" stuff never does. What these are though
are really good for a healthier brownie option. Personally, I thought they tasted kinda of like super chocolate
chip banana bread. I don't know about you, but that sounds pretty good to me! I couldn't taste the zucchini at all,
so these would be a great way to sneak in some veggies for your littles. Plus, the zucchini, banana, and applesauce really make these super moist.
Ingredients:
1/2 cup applesauce
1 large banana mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded or grated zucchini
2 cups all purpose flour
1/2 cup mini chocolate chips
Directions:
Preheat oven to 350 degrees.
Grease and flour an 9x13 inch baking pan.
In
a large bowl, mix together the applesauce, mashed bananas and sugar.
Add vanilla and cocoa and mix together.
Then add baking soda, salt, and
zucchini and mix together.
Add flour and mix together.
Spread evenly into a prepared pan.
Sprinkle mini chocolate chips on top of batter all over.
Bake for 25-30 minutes until brownies
spring back when gently touched.
